HOW TO BREW
Add 1 TBSP tea, cover with 2 oz cold water, steep 5 min. Enjoy this first infusion as an umami blast to the tastebuds. Then Add 10 oz hot (130º) water, and steep for 30 seconds . Enjoy right away. Re-steep these leaves 2-5 more times and look for an increase in astringency and a decrease in umami flavor.

THE Green Tea
If you like green tea it doesn’t get better than this. Subtle, umami, energizing. First had it here about 15 years ago and excited to find it again. Favorite green tea by far.

A UNIQUE Tea Experience!
Wow. This tea is unlike anything I've ever tried, and perhaps ever will. You MUST brew to very specific guidelines; Samovar has good ones (found here https://www.samovartea.com/how-to-brew-gyokuro-high-end-japanese-green-tea/), with a long cold-brew first; this first infusion will truly disrupt your whole belief system in teas. You may not know if you like it or hate it. But, I promise it will grow on you and you will soon be craving it! For the following infusions but I prefer less water (100 mL, 3.5 oz) and slightly cooler second and third steeps (50C, 120F) with linger times (2.5 and 3 min, respectively) then increasing to 70C (160F) and 2.5 min for the fourth infusion, and finally 70C (175F) and 2.5 minutes for the fifth infusion. The theanine and caffeine synergize to give a calm and happy energy. This tea will likely become part of my regular rotation.
