"Samovar Tea Lounge was going strong at 18th and Sanchez at the edge of The Castro District when I "discovered it" a few years ago. It didn't need me to talk about it's specialness. It's busy morning, noon and evening. People inside are studying, knitting, reading, sipping, recovering, dating, scoping, listening and imbibing. Samovar's food menu is straightforward and small, changing slightly with the seasons.

Sometimes I want to go where it's quiet. I enjoy the trust I feel in these places and feel grateful that they continue to survive in San Francisco-- a city not known for it's ease when it comes to owning and operating food businesses. I desire familiar food that's consistently good and sometimes blows my mind. I have a hankering for a little sameness and a dash of surprise.

And when it's time to take a break of trying the latest thing, I hope you'll take cover from the hustle and bustle, or just the fog, and give Samovar a try...Visit the website of KQEd

Robert Sandler and his two business partners received more than $100,000 through a Greater Bay Bank loan backed by SBA. A: Pu-erh tastes earthy because it's aged. Pu-erh is the only tea to improve over time; in all other teas, freshness is key. Pu-erh is sometimes aged underground, wrapped in rice paper, or packed inside bamboo stalks or citrus fruits, lending it some surprising, complex flavors, from dark and chocolaty to light and hay-like. During aging, pu-erh is exposed to different temperature zones, encouraging various yeasts to thrive (just as with fine wines and cheeses). Pu-erhs that have been aged five years or more can be delicious, but as with wine, older doesn’t always mean better. A pu-erh’s quality comes from a combination of age-time, environment—including temperature—and the skill of the humans who harvest and blend it for consumption. The best pu-erhs are smooth, rich and full bodied. And while the coveted tea is low in caffeine, it can display pleasingly bittersweet, coffee-like flavors....

In addition to the chill factor, the teas are delicious and the food is scrumptious. The Yerba Buena location has the most incredible view. It is glass encased, so I feel like I'm sitting on cloud nine with my cup of tea. I love the osthmanthus tea because they serve it in a glass pot so you can see the blossom open as it steeps. They also have amazing tea pairings by culture...

When Samovar Tea Lounge opened in San Francisco four years ago, trash from the 50-seat cafe filled up six waste bins each week.These days, that number is down to one, and owner Jesse Jacobs vows that Samovar, which now operates two locations, will be waste-free before long. "Our goal is to be a 100% waste-free operation, and we're working on educating the staff to make this reality," he says. Employees must be trained to use the seven recycling bins in the kitchen. Each holds a different material, ranging from organic items such as eggshells to plastic and tin foil. The trick is to get employees to "think twice" before simply tossing an item into the trash can. "You have to become aware," Jacobs says. Because waste haulers charge per container, recycling saves Samovar Tea Lounge money. Jacobs also has trimmed costs by training staff to monitor the light level in dining rooms and cleaning equipment regularly to make sure it runs efficiently. "Our business plan has always been to be as green as possible," Jacobs says.
